The Onion Knight was once a smuggler. After running the blockade to deliver food and supplies to Stannis Baratheon's beleaguered forces in Storm's End, Baratheon rewarded him by cutting off a few of his fingers and knighting him; the fingers for the crime of smuggling, the knighting for the assistance he gave. Since then, Davos has been a loyal follower and unofficial adviser of the stone-faced nobleman.I never imagined Davos in a green outfit, but it sort of works. Here is the picture I referred to:
