Loud, bossy and is willing to beat up anyone that gets in her - or her friends - way, Undyne is the leading captain of Asgore's Royal Guard, having helped with collecting 6 souls in order to help break the barrier that keeps everyone underground from returning to the surface. Her bully-like attitude doesn't seem to hide, however, that she has a certain soft spot for the royal scientist Alphys.
I feel as though her armoured form's going to take a bit longer, since the only real reference I can use is the actual ingame sprite. There's not a whole lot of references about what her actual armour looks like, unfortunately.
