I'm not sure why nobody's thought of this before now, but today I decided to try and make some custom Villagers for my server.
I did this by modifying the original facial texture, and then uploading it as a custom player head. The result, (in my opinion) is actually quite pleasing! Even if it does make their heads somewhat rounder as a result. However, given the backlash originally when Villagers were first announced, I doubt too many will care much regardless. 
If anybody would like details on how it's done, I'd be happy to indulge, however most of the instructions are already out there. MCStacker came especially in handy.
